Hope everyone is enjoying their long weekend!
I'm laboring on Labor day weekend -- busy processing farmers' market and other bounty, even though it is the hottest weekend of the summer here in Portland.
I spent yesterday making an enormous batch of caponata -- more like a caponata/ratatouille hybrid -- from roasted red peppers, eggplant, tomatoes, onions, garlic, sweet onions, and basil. It's in tubs in the deep freeze.
Today I'm making apple sauce from the apples my friend picked in her back yard.
